Brigadier Truffle

Ingredientes

Truffle dough:

1 package Garoto Dark Chocolate (1kg)
1 can whipping cream
2 tablespoons brandy

White brigadier (brigadeiro):

1 can sweetened condensed milk
1 can whipping cream
1 tablespoon wheat flour

Decoration:

1 package Garoto Chocolate Jimmies (130g)

40 truffles

1. truffle dough Process 500g chocolate together with whipping cream in water bath or microwave (on medium for about 3 minutes, stirring halfway through). Stir until chocolate is thoroughly melted. Add brandy and stir well. Refrigerate for about 3 hours or until stiff.

2. brigadier (brigadeiro) In a saucepan, combine sweetened condensed milk and wheat flour. Stir until thoroughly dissolved, fold in whipping cream and cook until bottom of pan can be seen. Let cool down.

3. assembly flatten a portion of truffle dough, put a portion of filling on it and roll into a ball. Place them on a surface lined with butter paper. Place remaining chocolate in a glass casserole and microwave on medium for about 3 minutes, stirring halfway through to distribute heat evenly. After melting, transfer content to another glass casserole and stir continuously to make chocolate cool down and reach temperature for coating. Dip each ball into chocolate. Tap fork at the edge of glass casserole to let the excess drain off, place balls again on the butter paper lined board and sprinkle jimmies over. Refrigerate for about 5 minutes to set. Put in crimped paper cups or chocolate boxes.
